Ingredients (Serves 1)
100g halloumi, sliced
150g cooked green or brown lentils (about half a pouch)
1 tbsp olive oil
1 handful cherry tomatoes, halved
½ red onion, finely sliced
1 handful baby spinach or rocket
½ tsp smoked paprika
½ tsp garlic granules
Salt & pepper to taste
Optional: squeeze of lemon, chilli flakes, fresh herbs
How to Cook It
1. Fry the halloumi Heat half the olive oil in a pan. Add the halloumi slices and cook for 2–3 minutes per side until golden and crisp.
2. Warm the lentils in the same pan, add the remaining oil, lentils, smoked paprika, garlic and a pinch of salt. Warm through for 2 minutes.
3. Build the bowl Place the fresh spinach or rocket at the bottom. Top with the warm lentils, cherry tomatoes and red onion.
4. Add the halloumi Lay the golden halloumi strips on top. Finish with lemon juice, pepper or chilli flakes if you want extra heat.
